Vegetarian pizza in Mumbai is often defined by excess — extra cheese, piled vegetables, anything to compensate for the absence of meat. At Vincenzo Capuano, we take the opposite approach. Our vegetarian options are among our most precise: the Margherita, a celebration of three Italian ingredients in perfect ratio; and the Provola E Pepe, the 2019 World Pizza Champion pizza — smoked Provola, hand-crushed tomatoes, and a pepper mix that rewards restraint.

Both pizzas are made on our signature 30-hour fermented dough, baked at high heat for the characteristic leopard spotting and cloud-like cornicione. These are not "also vegetarian" — they are intentionally, completely vegetarian, and among the best things we serve.
